Shrimp & Black Bean Chimichurri Gumbo

There’s nothing better than a meal that is both delicious and simple to prepare! This is exactly what my Shrimp & Black Bean Chimichurri Gumbo is… and more. Not only is it tasty, it only requires you to buy 4 ingredients (the seasonings and such you probably have on hand), it cooks quickly, and it’s KID-APPROVED! Talk about a win, right?

This recipe uses ingredients that are 100% from Trader Joe’s, my favorite grocery store! Trader Joe’s makes it so simple for you to just mix and match match their products and make amazingly delicious and simple meals. Now, if you don’t have a Trader Joe’s local to you, don’t fret! You can totally recreate this recipe by making some substitutions or adding your own seasonings and ingredients.

This Shrimp & Black Bean Chimichurri Gumbo is comfort food that I like to prepare for my family throughout the year, but especially during the colder seasons. Whenever I make this gumbo, I only use Argentinian Red Shrimp because it is not chewy and does not get dry like the regular shrimp available. The texture is lobster-like. I also typically add Andouille Sausage for a little kick and add more smokiness to this yummy dish. You can, however, add whatever proteins you prefer, like chicken, other types of sausage, or even make it vegetarian by adding kale or spinach. “It’s your business!” in my best Tabitha Brown voice.

To make this gumbo, the Trader Joe’s ingredients you will need are: Chimichurri Rice, Organic Black Beans, Roasted Red Pepper Soup, and Argentinian Red Shrimp. (Note: The shrimp is frozen, so thaw ahead of time.) I also used Pink Himalayan Salt and 21 Seasoning from Trader Joe’s, as well as the Kerry Gold Butter.

When I recently made this recipe, I made a double portion, enough to feed my husband and I, plus our 3 little ones. I will show how to make a regular portion, however! Besides, having leftovers is always a plus. To get started, heat 2 tablespoons of butter over medium heat. (Again, my photo shows more than that because I increased the recipe.)

Next, add the Chimichurri Rice, Roasted Red Tomato Soup, Black Beans, and Argentinian Red Shrimp to the pot.

Now add your desired seasonings. I prefer simplicity with this dish, so I just used Pink Himalayan Salt and 21 Seasoning from Trader Joe’s. You can, however, use additional seasonings of whatever brand you have on hand. Once the seasonings are added stir well. (You can always add more seasonings later after the shrimp is cooked well.) Cook for about 15 minutes or until everything slightly bubbles, stirring occasionally, on low-medium heat to medium heat.

Voila! You’re done. Simply serve and enjoy! As an alternate cooking method, you could prepare the rice and shrimp as directed on the bags, and then dump the rest of the ingredients in once the shrimp has cooked. I recommend serving this with cornbread, like these yummy Cornbread Bites with cheese and jalapenos from, you guessed it, Trader Joe’s! Now, give it a shot and let me know how it tastes! Ingredients
  

  • 1 bag Trader Joe's Chimichurri Rice
  • 1 can Trader Joe's Organic Black Beans
  • 1 bag Trader Joe's Argentinian Red Shrimp
  • 1 Trader Joe's Roasted Red Pepper Soup
  • Andouille or Smoked Sausage of Choice (optional)
  • 2 tbsp Kerry Gold Pure Irish Butter (or butter of choice)
  • 1 tsp Trader Joe's Himalayan Pink Salt, to taste add more after shrimp is cooked
  • 1 tsp Trader Joe's 21 Seasoning, to taste add more after shrimp is cooked

Instructions
 

  • Melt butter in the pot over medium heat.
  • Add chimichurri rice to pot.
  • Add red roasted tomato soup to the pot.
  • Add organic black beans to the pot.
  • Add the Argentinian Red Shrimp to the pot.
  • Add seasonings of choice.
  • Stir well & cook on low-medium to medium heat until slightly bubbles, about 15 minutes, stirring occasionally.
  • Serve and Enjoy!
